How do I record a walk-in sale?
Record it as a quick sale, under Orders then Income. Enter the date, what it was, what you took and what it cost you to make, and it lands in your books straight away. A quick sale is a one-line income record, not an order: no order number, no customer attached, no quote, no invoice, no payment schedule.
That is the point of a quick sale. Market days, a cash sale at the door, a tray sold to a neighbour: money that is real and has to reach your accounts, but that nothing would be gained by writing up as a full order.
What a quick sale records
Date, a description and a sale type (market, event, cash sale, online, POS sale, wholesale, other) so the reports can split them. Then location and event name for the ones that have them, gross sales, cost of goods and any additional costs such as a stall fee or a commission. Net is gross sales minus cost. Payment method and a reference are optional.
Tax is worked out from your own tax settings rather than typed, so a quick sale is taxed on the same basis as everything else you sell.
What it does to stock
Nothing, unless you tell it to. Stock is opt-in per sale, and it is the one part worth being deliberate about.
Add the items you sold, with quantities, and leave "reduce inventory" on. Saving then deducts them through the same stock ledger an order uses: a product that carries its own stock reduces itself, a product linked to a pantry item reduces the linked item in that item's own unit, and an item with stock tracking switched off is left alone. Turn the toggle off, or record the sale without items, and no stock moves at all.
Can a walk-in sale be refunded?
Correct the figures on the sale, or delete it and re-enter, remembering the note about stock above. A quick sale is a typed income record, so reversing one is an edit, and you handle the money itself in whichever gateway took it.

Where it turns up
In the quick sales report, broken down by sale type with revenue and profit, and in the day's totals. Anything that needs an order number, reserved stock or a place on the bake sheet and the calendar is written up as a real order instead.
